Here's what you'll need:

  • 1 pound of large shrimp, peeled and deveined
  • 2 tablespoons of olive oil
  • 1 teaspoon of paprika
  • 1/2 teaspoon of garlic powder
  • Salt and pepper to taste
  • 2 ripe mangoes, diced
  • 1/4 cup of red onion, finely chopped
  • 1 small jalapeno pepper, seeded and finely chopped
  • 2 tablespoons of fresh cilantro, chopped
  • Juice of 1 lime

  1. Preheat your grill to medium-high heat.
  2. In a bowl, combine the shrimp, olive oil, paprika, garlic powder, salt, and pepper. Mix well and evenly coat the shrimp.
  3. Thread the seasoned shrimp onto skewers, ensuring they are evenly distributed.
  4. Place the shrimp skewers on the preheated grill and cook for 2-3 minutes per side until they turn pink and slightly charred. Remove them from the grill and set aside.
  5. In a separate bowl, combine the diced mangoes, red onion, jalapeño pepper, cilantro, and lime juice.
  6. Gently toss the ingredients together to create the mango salsa. Serve the grilled shrimp skewers alongside the mango salsa.
