Nothing completes a perfect summer gathering like a harmonious pairing of delectable flavors. We put together a recipe that will complement our Peach Sangria.
Grilled Lemon Herb Chicken with Peach Salsa:
- 4 boneless, skinless chicken breasts
- Juice of 2 lemons
- 3 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
For the Peach Salsa:
- 2 ripe peaches, diced
- 1/2 red onion, finely chopped
- 1 jalapeno pepper, seeded and finely chopped
- Juice of 1 lime
- 2 tablespoons chopped fresh cilantro
- Salt to taste
In a bowl, combine the lemon juice, olive oil, minced garlic, dried oregano, dried thyme, salt, and pepper. Whisk until well combined.
Place the chicken breasts in a shallow dish and pour the marinade over them. Ensure the chicken is evenly coated.
Preheat your grill to medium-high heat.
While the grill is preheating, prepare the peach salsa. In a separate bowl, combine the diced peaches, red onion, jalapeno pepper, lime juice, chopped cilantro, and a pinch of salt. Mix well and set aside.
Grease the grill grates lightly with oil to prevent sticking. Place the chicken breasts on the preheated grill and cook for about 6-8 minutes per side, or until the chicken is cooked through. Cooking time may vary depending on the thickness of the chicken breasts.
Once cooked, remove the chicken from the grill and let it rest for a few minutes.
Slice the grilled chicken breasts into thin strips.
Serve the grilled chicken with a generous portion of the peach salsa on top. Garnish with additional cilantro, if desired.
